This is a really great, simple meatloaf recipe that is great with brown gravy and mashed potatoes!
1/2 c. ketchup
1. Preheat oven to 400. Combine ketchup and mustard. Reserve 2 1/2 Tbsp. ketchup mixture.
1 serving=1 mini or 1/4 of the full loaf
1 1/2 Tbsp. dijon mustard
1 lb. ground sirloin
3/4 chopped onion
1/4 c. breadcrumbs
salt and pepper to taste
1 large egg, beaten
additional seasoning blends of your choice (I like Penzey's English Prime Rib rub for this)
1. Preheat oven to 400. Combine ketchup and mustard. Reserve 2 1/2 Tbsp. ketchup mixture.
2. Combine remaining ketchup mixture with beef and the rest of the ingredients in a large bowl.
3. Put beef mixture into a loaf pan (or divide into 4 equal portions and shape each into a 4 by 2 1/2 inch loaf for mini meat loaves).
4. Spread the reserved ketchup mixture onto the loaf or loaves. Bake for 25 minutes for the mini loaves and about 30-40 for one.
