Sausage and Tortellini Soup

This is a comforting, quick dinner and is a family favorite of ours! It's very easy, low in calories, and great for a chilly weeknight with some crusty bread. 
2 tsp. olive oil 
1/2 lb. turkey italian sausage, removed from casings
1 small onion, chopped 
2 garlic cloves, minced
1 (14 oz.) can italian style diced tomatoes
2 (14 oz.) cans fat-free less sodium chicken broth
1 (9 oz.) package fresh cheese tortellini, uncooked
2 c. bagged baby spinach leaves

1. Heat oil in a stockpot or dutch oven over med-hi heat. Add the onions and garlic and then add the sausage. Cook until the onions are softened and the sausage is browned, stirring to crumble.
2. Add tomatoes and chicken broth and bring to a boil. Cover, reduce heat and simmer 10 minutes. 
3. Add tortellini. Simmer 6 minutes, or according the the tortellini package direcitons, stirring occasionally. Remove the soup from heat. Add spinach and stir into the soup until wilted.
