Sausage and Tortellini Soup

This is a great quick dinner and is one of Patrick's favorites. It's very easy, low in calories, and great for a chilly weeknight!
1/2 lb. (2 links) turkey italian sausage
3/4 cup chopped onion
2 garlic cloves, minced
1 (14 oz.) can italian style diced tomatoes
2 (14 oz.) cans fat-free less sodium chicken broth
1 (9 oz.) package fresh cheese tortellini, uncooked
2 c. bagged baby spinach leaves

1. Heat a stockpot or large saucepan over med-hi heat. Remove sausage from casings and add along with the onions and garlic to pan. Cook until browned, stirring to crumble.
2. Add tomatoes and and next 3 ingredients to pan; bring to a boil. Cover, reduce heat and simmer 10 minutes. Add tortellini. Cover and simmer 6 minutes, stirring occasionally. Remove the soup from heat. Add spinach and stir into the soup until wilted.

Serves 4
