Oven Fried (or air fried) Chicken with gravy


Growing up, my Mom's oven fried chicken was a Sunday dinner staple. This one can be done in the oven or air fryer. For ease and to cook for our family of three, I usually just use chicken thighs, but use your favorite cuts and it will be delish! 

To make the chicken: 

4 bone in, skin on chicken thighs

1 quart of buttermilk 

1/4 c. flour

your favorite seasonings, to taste (I like to use a blend and am always trying new ones. I have used a Cajun seasoning, Trader Joe's Everything But the Leftovers, or Penzey's Northwoods is delicious for this)

For the gravy (if making oven fried):

pan drippings from the oven fried chicken

2 tablespoons of flour

1 1/2 milk 

the seasonings you used to season the chicken

1. Season the chicken with salt and pepper and put into a bowl with enough buttermilk to cover the pieces. Let marinate for an hour.  

2. Preheat your oven or air fryer to 400. Add the flour and seasonings to a large zip top bag.

3. Remove the chicken from the buttermilk and let it drip to get of any excess. 

4. Dredge in the flour mixture and shake of any excess. 

5. Place the chicken in a single layer in the air fryer basket or into a glass baking dish to bake. Spray with cooking oil spray. 

6. Bake for about 30-40 minutes total, or air fry about 20 minutes total, flipping halfway for both recipes. When the chicken reaches an internal temperature of 165 it is ready!

7. To make gravy: add the pan drippings from the oven fried chicken to a small saucepan and add 2 tablespoons of flour whisk to make a roux. Add 1 1/2 cups of milk and whish until thickened. Season to taste. 

I hate to admit, in a pinch with the air fried chicken, I have use store bought chicken gravy and it's good!
