Meal Prep/Freezer Breakfast sandwiches

 

Meal prepped breakfast sandwiches, bowls and burritos have been a lifesaver this school year for rushed mornings! It's doesn't matter if it's an at home learning day or a day we rush off to school, these are so great for a quick breakfast. Another great thing about these sandwiches (and about the bowls and burritos too) is that they are customizable and you can use whatever bread/meat/cheese you want! You can also make many ahead of time and freeze some in advance. I typically just make enough for the week since my freezer is not very big and is full! Also, if you were to freeze, I hear it would be best to take out a week's worth to let them thaw before heating. Here's how to make them: 

6 english muffins (as you can see I have also used bagel thins for these, but I like Thomas' Light English Muffins best) 

12 eggs 

6 sausage patties (I like Meijer frozen turkey sausage patties) (you can also use slices of ham, bacon or canadian bacon) 

6 slices of cheese (I like Sargento Thin Sliced Cheddar) 

1. Preheat oven to 350. 

2. Spray a 9x11 baking dish with cooking spray and add the eggs. Season with salt and pepper and whisk until combined. Bake for 20 minutes. 

3. While the eggs are baking, toast your english muffins (you can skip this step, but I like to make them crispy) and heat the sausage patties or cook the bacon. 

4. When the eggs are done, let them cool a bit, then slice them into 6 equal squares. 

5. Tear off a square of aluminum foil and top with an english muffin. Top each with one egg portion, sausage (or ham or bacon) and cheese. Let the sandwiches cool before wrapping. Put in the fridge for a quick breakfast all week! Mine take about 1 minute to heat in the microwave.
