This recipe is adapted from an Everyday Food recipe. We make these a lot on weekends, but they are easy enough to make any day of the week!
8 oz. of cooked and shredded chicken breast seasoned with the Mexican seasonings of your choice (I like Penzey's Fajita Seasoning for these)
4 taco sized tortillas
1/2 cup shredded cheese of your choice
Toppings:
1. Preheat oven to 400.
2. Lay tortillas onto a baking sheet and top each with 2 Tbsp. of the Mexican cheese blend. Bake for 5 minutes. Remove the tortillas from the oven and top each with 2 oz. of chicken. Put back into oven and bake for 5 more minutes.
3. Serve the tostadas with your favorite toppings!
Serves 2.
