Chicken Tostadas

This recipe is adapted from an Everyday Food recipe. We loved the tostadas, but they really needed to be lightened up, since they were about 9 points a piece!
4 oz. of cooked chicken breast seasoned with the Mexican seasonings of your choice (I used cumin, chili powder and paprika)
4 (0 pt. each) tortillas (I used Mission Carb Balance Whole Wheat fajita tortillas-2 of them will be 3 Points+)
Light Mexican cheese blend
salsa
tomatoes
lettuce
1/2 of an avocado* (optional)
4 Tbsp. light sour cream* (optional)

1. Preheat oven to 400. Add the cooked chicken to a bowl. Using two forks, shred the chicken.

2. Lay tortillas onto a baking sheet and top each with 2 Tbsp. of the Mexican cheese blend. Bake for 5 minutes. Remove the tortillas from the oven and top each with 1 oz. of chicken. Put back into oven and bake for 5 more minutes.

3. Serve the tostadas and top with salsa, lettuce, and tomato.

Serves 2.

1 serving=2 tostadas

*Dividing 1/4 of an avocado between your two tostadas will make the Points+ value 10, and adding 1 Tbsp. of light sour cream to each of the two tostadas will make the Points+ value 11.
