Greek Salad

This is one of my favorite lunches! I eat it at home during the summer and take it to school during the year. If you pack it, it's best to take the dressing in a seperate container and top it when you're ready to eat. Feel free to add/subtract the ingredients as you wish. I don't always add the bell peppers, but this time I had them on hand.

5 leaves of red leaf lettuce, chopped
1 handful baby spinach
half of 1 roma tomato, chopped or grape tomatoes, halved
1/4 red bell pepper, chopped
pepperocinis, sliced
6 pitted kalamata olives, chopped
1/4 cup crumbled feta cheese
1 Tbsp. Garlic Expressions dressing (or a 2 pt. serving of your favorite Greek dressing)

1. Add the lettuce and spinach to a large bowl and toss to blend. Top with the remaining ingredients. Serve.

This recipe makes 1 serving.

I also love to add 2 oz. chopped grilled chicken breast. It will increase the points value to 10, but is more filling.
