Salsa Chicken with Cheese

This recipe is one that I made up all on my own. It's light, easy and delicious. It has quickly become one of our favorites and is great on a cold night. 2 boneless, skinless chicken breasts, seasoned with your favorite seasoning (I love Penzey's Northwoods Fire for this)
2 wedges of Laughing Cow Queso Fresco and Chipotle cheese
1 jar of your favorite salsa verde
1/4 cup of your favorite cheese (such as Mexican blend, cheddar or colby jack)
1 c. brown rice

1. Preheat oven to 450.
2. Slice a small opening in the side of each chicken breast. Insert 1 wedge of cheese into the opening in each chicken breast.
3. Spray a baking dish with non-stick cooking spray. Cover the bottom of the dish with a bit of salsa just to cover. Add the chicken breasts and pour in salsa, as much as you would like. Top with shredded cheese. 
4. Cover and bake for 20 minutes, then uncover and bake an additional 10 minutes, or until cooked through and an instant read thermometer reads 165.
5. While the chicken bakes, cook rice according to package directions and serve topped with chicken and salsa.

Serves 2.
1 serving=1 chicken breast with sauce and 1/2 cup of brown rice
