Salsa Chicken with Cheese

This recipe is one that I made up all on my own. It's light, easy and delicious. It has quickly become one of our favorites! 2 (1/4 lb) boneless, skinless chicken breasts
2 wedges of Laughing Cow Queso Fresco and Chipotle cheese
1 jar of your favorite salsa verde
1 c. brown rice

1. Preheat oven to 450.
2. Slice a small opening in the side of each chicken breast. Insert 1 wedge of cheese into the opening in each chicken breast.
3. Spray a baking dish with non-stick cooking spray. Cover the bottom of the dish with a bit of salsa just to cover. Add the chicken breasts and pour in salsa, as much as you would like.
4. Cook rice and serve topped with chicken and salsa.

Serves 2.
1 serving=1 chicken breast and 1/2 cup of brown rice
10 Points+ per serving
